Grain-Free Pizza Pie
A deep-dish, yummy, healthy, eat-with-your-fork pizza that is so filling, you’ll likely only have room for one slice!
When pondering a gluten-free or grain-free diet, one of the first things many people think of is pizza. “How am I going to live without pizza!?” Well, you don’t have to! The crust of this pizza is made with almond flour! So now you can eat your pizza and be healthy too!
INGREDIENTS:
Crust:
- 2 cups blanched almond flour
- ½ teaspoon sea salt
- 1 teaspoon dried or fresh basil
- 2 teaspoons dried or fresh oregano
- ½ cups fresh mozzarella cheese, shredded or finely chopped
- 2 eggs
- 2 tablespoons olive oil
- ¼ cup water
Sauce (for extra sauce, double these ingredients):
- 1 can organic tomato paste
- 2 packets Stevia or 1 packet monk fruit; or other equivalent sweetener, if desired
- 1 can water (equal to size of tomato paste)
- 1/2 teaspoon dried or fresh basil
- 1 teaspoon dried or fresh oregano
- 1 tablespoon chopped/minced garlic
- 1 teaspoon black pepper
Toppings (or toppings of your choice):
- 1 small onion (white or yellow), chopped
- 1 cup fresh mushrooms, chopped
- 1 lb. grass-fed beef
- ½ to 1 cup fresh mozzarella cheese, shredded or finely chopped, depending on how “cheesy” you like it.
DIRECTIONS:
- Preheat oven to 375
- In a medium bowl, combine all of the crust’s dry ingredients. In a separate bowl, whisk eggs and add in olive oil and water. Add wet ingredients to dry ingredients and mix well.
- Lightly grease the bottom and sides of an oven-safe, deep-dish pan.
- Spread dough mixture evenly across bottom and slightly up the sides. The dough will be very sticky, but try to fill in any holes and spread evenly.
- Bake in oven for 15 minutes.
- While the crust is baking:
a. cook ground beef and sauté onions, mushrooms in large skillet.
b. in small sauce pan, mix the sauce ingredients and bring to low simmer. - When crust is done, pull from oven and top crust with sauce and then the toppings (beef, onions and mushrooms). Be very careful not to touch the pan’s handle – it will be hot! I like to lay my oven mitt on top of the handle to remind me as I have forgotten one too many times and burned my hand. Ouch!
- Add mozzarella to very top and return pan to oven; bake for 10 minutes, or until cheese is melted.
