Grain-Free BLT Avocado Wrap

These coconut wraps will be your saving grace on the grain-free diet! Since you’re cutting out wheat and corn, flour tortillas are OUT, corn tortillas are out, gluten-free bread is OUT. With no sandwich or wraps options, it can seem pretty dismal! Enter the coconut wrap! If you’re not a lover of coconut, don’t worry, it doesn’t really have a strong coconut flavor. It does have a hint of sweetness, but not overly coconutty.
To assemble this wrap, you will need the Coconut Wraps and Paleo-Friendly Mayo (which is very hard to find – even the mayos that say they are made with avocado oil or olive oil, are really made with canola or other non-desirable oils). This Paleo-Friendly Mayo is made with simple ingredients and JUST avocado oil – no other oils added.
Ingredients:
- Coconut Wraps
- Paleo-Friendly Mayo
- Sugar-Free & Nitrite-Free Bacon (if possible) – Pederson Farms makes a great sugar-free bacon
- Avocado
- Lettuce
- Tomato
- Cheese (if desired) – choose cheeses with pure ingredients and no extra junk
- Pepper (if desired)
Directions:
Add mayo, cooked bacon, lettuce, tomato and sliced avocado to coconut wrap and then roll up. Add pepper and cheese to taste and enjoy!
