Healthy, Virgin, Low Carb Margaritas
The recipe for this drink came out of a desire to NOT drink the junk added to ready-made Margarita mixes, as well as a desire to be healthy and to maintain a low carb lifestyle. You can certainly add tequila to this recipe! I kept forgetting to put the Tequila in and wouldn’t realize it until the whole drink was consumed. I figured if I drank it without caring the Tequila wasn’t in it, I might as well do that on purpose! And thus the healthy, low-carb, virgin margarita was born.
I try to buy organic limes when available. I use 365 Everyday Value, Organic Liquid Stevia from WholeFoods which you can order through Amazon. I make 2 1/2 cups per batch which fills 2 regular size glasses (see photo below). I usually make about 3 batches at once so I am ready to pour the next round at a moments notice. I store my batches in Ball 24-Ounce Wide Mouth Jars
using these caps
(see photo below). I do not store premade batches for more than 24 hours (we like them too much to keep them around).
Makes:
2 servings virgin margaritas
Ingredients:
- juice of 2 fresh squeezed limes (medium to large size; not key lime size) – you can use more limes per serving but we are trying to keep this low carb. 1 lime has about 5 grams carbs.
- 1/4 to 1/2 tsp liquid Stevia
- filtered water
Directions:
- Squeeze juice from 2 limes into your Ball Wide Mouth Jars
(or other container that can hold at least 2 1/2 cups of liquid). I use a the larger, yellow lemon squeezer
for this because limes are frequently too large for the green squeezer dedicated for limes and I figure, “why do I need a separate squeezer for limes vs lemons anyway?”
- Add filtered water to make a total of 2 1/2 cups including the lime juice (on the Ball canning jar, the water plus the lime juice makes 2 1/2 cups at the jar’s fill line)
- Add 1/4 to 1/2 tsp liquid Stevia
to taste
- Optional: Salt your rim… Take a lime wedge and rub pulp along rim of drinking glass; then dip glass rim into saucer of salt
- Optional: Add tequila to your drinking glass if desired.
- Pour contents over ice in 2 tall glasses. Enjoy!
